Okay. Holy amazing! I’ve got cupcakes on the mind for two reasons. 1. My awesome neighbors dropped some delicious vegan chocolate cupcakes on my front porch a few mornings ago and I can’t get them off my mind and 2. My birthday is this week and I’ve been scheming up the perfect birthday dessert that wont make me feel totally guilty. In comes Chef Chloe’s Vegan Chocolate Strawberry Shortcake Cupcakes. 1 ½ cups all-purpose flour (or gluten-free all-purpose flour plus ¾ teaspoon xanthan gum)
1 cup sugar
1/3 cup unsweetened cocoa powder
1 teaspoon baking soda
½ teaspoon salt
1 cup coffee, water, or coconut milk
½ cup canola oil
2 tablespoons white or apple cider vinegar
2 teaspoons pure vanilla extract
Frosting
1 cup non-hydrogenated vegetable shortening
3 cups powdered sugar
1 teaspoon pure vanilla extract
2 to 5 tablespoons soy, almond, or rice milk
Garnish
1 ½ cups hulled and sliced fresh strawberries
Powdered sugar
